Dinners & Things: 3/25-3/31

 For Monday's dinner, I started with this brussels sprout chickpea pasta recipe and added bacon because I had to. Also, I think it was a year ago when I realized raspberries actually has a p in it. I think it was Monday when I realized it's brussels not brussel.

On Tuesday I took out some chicken thighs, but because this month's Food & Wine is still lying around taunting me with its cover.  I pounded them and made them into cutlets, dredged and dipped and coated  and did a little pan frying. 

On Wednesday I busted out some homemade Naan, Cucumber Raita, Indian Butter Chickpeas and Spinach Kofta.  The Naan and Koftas and Raita are from Chetna Makan's Thirty-Minute Indian. One of my favorite cookbooks. I have made so many recipes from there and they are all truly thirty minutes. The Indian Butter is a conglomeration of various recipes I have used and I probably make it a little different every time.

Thursday found me and Watts eating chicken wings at Freeman's after I made a quick trip to Durham and Nuala had work and there was no time or motivation to cook.

On Friday Miles and his girlfriend was home so there was Spaghetti Bolognese or Spag Bol as we call it. Spag Bol is my favorite meal. Saute some onion and garlic. Brown the meat. A can of crushed tomatoes. The big kind. Salt. Pepper. Some red wine. Some tomato paste. The rest of the jar of diced tomatoes in teh fridge. Pecorino. Parsley.

Saturday I made Steak Frites after seeing two older gentlemen eating that while we ate our chicken wings. I was obsessed. 

Since it's Easter, I also baked a little nest cake from Nigella. I also signed up for a free webinar to make a pull apart cupcake Bunny with one of my favorite former Bake Off folks: Howard. During Covid times Nuala and I did a lot of classes with Bake with a Legend because we had time and we were obsessed. I tried to make my bunny look like Howard's, but alas cake decorating has never been my strong suit, but Nuala said it didn't turn out as bad as she thought it would. 

For Easter dinner, we're heading to a neighbors so that's the end of the week in my kitchen.
