September 8th: loaded sweet potatoes & Victoria Sponge Cake

 The Queen died today and I felt the need to make a Victoria Sponge. I had wanted to make one for the jubiliee, but it was summer and making cakes in my non-ac kitchen can be daunting in the heat. The air was cool for our area so a cake was an option. For dinner I baked some sweet potatoes and sauteed up some black beans, tomatoes, spinach, onion and garlic to load the little sweet tatties with. Topped with some cheese, it was definitely less white than the night before. And the cake... one of my best.
