End of August Dinners: Carmy's Chicken

 I am overwhelmed with work. I am always on my computer grading. In fact, grading is what I should be doing right now. I forget to write down what we've eaten. I don't have time to plan menus for the week unless it's in a vague sort of way and then it only lives in the back corner of my brain. I have made tacos with all sorts of fillings and we've eaten burgers at my sister's for a cookout. I think I made soba noodles one night too.

But last night, after a day that was too long, I made Carmy's chicken. I just named it Carmy's chicken because we've been watching The Bear and in it Chef Carmy is making Veal or Chicken Piccata. The way he was making that veal or that chicken. The way he looked at it with love. It made me want to make it as fast as I could. 

So even though I was still dripping with sweat and even though I didn't work out as nearly as long as I wanted to I found myself in the kitchen with the chicken, the capers, the wine, the butter, the garlic. Watts came home while I was still cooking which meant he was early or I was late or maybe we met somewhere in the middle. 

I poured a glass of wine and let the chicken cook to perfection. Afterwards, I may have spooned the sauce left in the pan directly into my mouth.
