August 23: Bean and Cheese Enchiladas

Whenever I decide what we're having for dinner, there are a lot of factors. Time and who will be eating it are the main ones. Last night I needed to bake some things for a work meeting on Thursday and made dinner, but just for me and Watts. So these Vegetarian Bean and Cheese Enchiladas it was. A relatively fast recipe even though I had to bust out the food processor to make the sauce, but the sauce is light and part of what you put in the sauce you put in the filling so it seems very economical too. Watts thought it was a store bought sauce and when it comes to Enchilada sauce I take that as a compliment. It only bakes for ten minutes which mean it was pre-heating the oven for what I needed to bake.
