July 26: Sausage and Potatoes and/or Polenta with Ricotta, Tomatoes and Spinach

I know sausage and potatoes has been done recently, but it's what was available in the house to cook. However, today I had to have a crown which traumatized me more than a root canal and I wanted something even more comforting and soft. Enter polenta which I topped with tomatoes and spinach sauteed with garlic and basil and a blob of ricotta. It was exactly what I wanted.
