June 7: Quick Chicken Noodle Soup

 Watts wants nothing to eat. He still eats, but he doesn't have the usual requests or appreciation of food. That's what being sick with Covid will do to you. I bought some soups in tins and bowls from the store and he's eaten one of them. Today I decided to pick up a rotisserie chicken and then bring it home to make my own homemade chicken soup. 

Really simple: saute one chopped onion, more garlic than you think sensible, two celery sticks chopped and two carrots chopped. Pour in broth. Salt. Pepper. Thyme from the garden. Bring to a boil. I had started boiling the noodles earlier so I just plopped them in along with chopped chicken, but I could have boiled them in the broth too. Threw in some parsley and all was well. He ate a big bowl for lunch and I'm imagining the same for dinner.

We'll see what tomorrow brings.
