June 28: Bacon Pasta

 I have been making variations of what I call bacon pasta since I first read Frances Mayes' Under the Tuscan Sun. Her recipe used arugula, cream and pancetta along with parmesan and pasta obviously. My family (not me) prefers Spinach so I try to oblige them with that and it's more likely for me to have bacon in the freezer than pancetta lying around. Everyone loves it (the vegetarian used to love it and confesses she might break for that one day), but yesterday I made "the best" version of it yet. The only thing I could think of what made it the best is that I used pasta water to supplement the cream and I was heavy on the pepper because I was having an imaginary day dream conversation. So I made those notes and the next time I make it I will try to make it just as best as it was last night.
