June 22: Tomato Braised Chickpeas

 I owned an instant pot for ages before I ever did anything with it. Eventually I used it as a rice cooker when ours broke. I confess that this is one of the only other recipes I use it for. Someday I'll move beyond these tomato braised chickpeas because I genuinely think it's fun to do everything in the one pot and it makes me daydream of taking this on a trip with us and cooking with it instead of using the propane stove, but then I come to my senses.
