June 16: Eggplant & Zucchhini Pasta

There's been an eggplant sitting in our fridge for a while. I've been wanting to eat it for a while, but it seems no one else did. Finally, I couldn't take it any longer and decided to pair it with the zucchini I thought I was going to use the other night to make this eggplant zucchini pasta by Pierre Franey. I love Franey's recipes. They always seem fancier than they are and almost always deserve a glass of wine. I made it earlier in the day before the heat settled in knowing we were going to see my mom in the afternoon and would be starving when we arrived home. After driving through a storm, I was starving and happy to have this sitting on the stove ready to be eaten.
