June 1: Summer Dinner---Fridge Empty

 It was hot and I didn't want to cook. Standing in front of a hot stove on a 90 plus degree day melts me. Despite that I had beets that needed to be used. So I sauteed them with a sweet potato and threw some feta on top. Then I made these Mapo Tofu Nachos which were fine, but I don't need to make again. Finally, there was a caprese salad. I think the string holding everything together was cheese.
