May 6: Salad Pizza

 I love salad pizza. It's a weird love. I remember Antonio's Pizza in Amherst, MA where I went to college being the first place I had it. I mean I'm from Queens and pizza was just pizza when I was a kid. But that salad pizza changed me. This recipe is one of my favorites and while it may not be everyone's favorite I will always eat all of it. That I can guarantee. The photo below serves at proof that there was at least a few minutes of sunshine on an otherwise bleak and dreary and way too cold May weekend.
