May 4: Beans & Greens Alla Vodka

 You know when you see a recipe and you're like, "Why have I never made this before?" This recipe was like that. A lot of Ali Slagle's recipes actually are. For some reason my mom never made vodka sauce. She thought it was gross. Honestly, I think she just never had a good one because she makes a sauce that's damn similar and has happily eaten mine in the past. As a result, I didn't make a vodka sauce until I was in my 40s. It was like some kind of revelation when I did. This recipe uses all the things we love and it didn't disappoint at all. I would absolutely make it again and absolutely make it with spinach again instead of kale.
