May 16: Carmelized Zucchini Pasta

 Caramelized Zucchini Pasta.  I know I say this a lot, but this is the kind of pasta dish that I could eat all of. I impatiently made this before, but I didn't really caramelize the zucchini and it was fine, but this- when you let it properly caramelize- is insane. I didn't have basil ready and on hand, but I did have parsley and that seemed to work just fine.
