May 12: Sheet Pan Feta with Broccolini and Tomatoes

 When I told Watts what we were having for dinner tonight he asked, "so what is it?" I repeated exactly what I had just told him. "I know. You said that, but what is it? What's Shipan?" Apparently, I'm not very articulate in the morning. Nuala specifically requested Sheet Pan Feta for dinner tonight. Or actually she requested it for dinner some night, but when I looked in the fridge I realized we had a whole block of feta needing to be eaten. Perfect timing. I'll also probably make pearl couscous and use up the cukes, olives, tomatoes and tahini leftover from last night with that. And then I have two sausage I'll cook up for the lad. Then I have about two nights off from cooking as we get ready to celebrate my niece's college graduation. The last of my sister's kids to graduate!
