May 23: Crispy Grains with Halloumi and Smashed Cucumbers

 It was supposed to only be me eating dinner which meant earlier in the day I had taken out the sweet potato I was going to eat. But Nuala wound up staying with me instead of going to her dad's and so I needed to provide my child with more sustenance than that. What happened next was this moment of panic in the kitchen where I started cooking fennel potatoes (which were delicious), but then veered away from whatever was going to accompany that meal to make Crispy Grains with Halloumi and Smashed Cucumbers. I will tell you that this might be one of my new favorite recipes to put cooked rice to good use. So flavorful, crunchy and then those smashed cukes. Perfection.
