April 19: Eggplant Zucchini Pasta

 I had an eggplant and zucchini so there was eggplant zucchini pasta. I confess this is one of my absolute favorite type of meals. I could eat and eat this until I couldn't eat anymore. It's a Pierre Franey recipe and I love how his recipes are so simple yet you feel a little bit fancy too.
