March 3rd: Burritos

Tonight is Nuala's first Varsity Softball game. The fact that she is on this team amazes me because she never played softball before. EVER. I played softball growing up, but was terrified to try out in high school. My daughter is much braver than I ever was or will be. 

The game is at 5 and since I'm going to be there I fixed dinner last night so that way we can eat when we get. home. Black Bean Burritos it will be. I make a big old tub of rice, mix in a jar of salsa, a bunch of spinach, black beans and shredded cheese. When it's dinner time, I'll bust out the tortillas and we'll fill them and heat them. Easy peasy.
