March 18: Softball Sandwiches

For the next two months, Friday nights will mostly involve softball which means dinner kind of needs to be portable---at least for me. Because there is no way I am not eating between 5-9pm. No way. I'd be the biggest mess of a human. So I made eggplant and sausage parm subs to eat in the bleachers. One of the assistant coaches walked by and was like, "that looks good." I had to agree.
