March 11: Ratatouille & Focaccia
Ratatouille & Focaccia. I'm never sure what's supposed to be the double letters and even after I look them up, I'm still worried I did it wrong. I was supposed to be alone tonight which meant I was on track to eating a baked potato and beans, but suddenly it turned out Nuala was going to be with me. I looked at the sad bowl of tomatoes sitting in the corner and new what I had to do. I also looked at the peppers taking up too much space in the crisper and I wanted them all gone.
Ratatouille was the first recipe of mine Nuala ever asked for. For me it was always a recipe that my mom or I would throw together. The ingredients changing slightly depending on what we had. When I find what I wrote down for Nuala as the base, I'll post it here.
To go with it I used the recipe for focaccia from The New York Times and added my own toppings of carmelized onions and peppers. But I have to tell you, I'm becoming a big fan of ricotta on focaccia so I threw some of that on top too.
