February 7: Italian Wedding Ball Soup

 I am well aware that it's not called Wedding Ball Soup, but Italian Wedding Soup with Meatballs sounds too long, plus I didn't quite follow this recipe. I made impossible pork meatballs because that's what I had in the fridge that needed to be cooked. 

It's a good day for soup. Since the dark hours of dawn, there's been freezing rain. The roads were slippery enough that my school delayed until noon which meant I had no live teaching to do today. Mostly I sat on the couch and graded and emailed and graded and organized and planned and prepped. I went out a few times and during those moments I decided we needed soup. And more cookies. 

I also made this citrus and herb tonic that you're meant to dilute with boiling water and maybe some honey. It's very medicinal, but I liked it. Especially on a cold rainy day. 

On days like today I realize what an hour and a little bit can offer. It's what I spend driving round trip for work. It's not a lot of time really, but it is a lot less time crunching. But then I miss teaching and my students and it adds a whole different level of stress.
