February 27: Braised Chickpeas

 I've been thinking about how they sell an air fryer top for the instant pot. I like this idea, but I need to know that I will actually be able to navigate the thing. Until Sunday, I had only ever used my instant pot for rice and that only started because our rice cooker completely died. With a bag of dried chickpeas and a cold rainy day, I found my strength to properly try the Instant Pot to make these Braised Chickpeas. I think we figured that if they weren't any good we could always go grab something else. Thankfully, we didn't have to. They were excellent and despite my fears....it was easy. Like super easy. We also made these Oven Roasted Fries. Maybe it was a little tahini overload, but sometimes you just have to. When else does tahini get to shine? Pretty much never.
