February 21st: Good Chicken

 Good chicken, but this time it's Garlicky Chicken Thighs with Scallion and Lime. Only I don't have scallions, but I have shallots and they always work just as well. As a side not, I currently am in possession of the tiniest heads of garlic I have ever seen. I cut one in half as you're supposed to do for this recipe and all the little cloves fell out of their mother nest. So I just peeled and smashed them and threw them in. That's never happened before, but I think it will be okay. I ate an entire Tupperware of leftover green beans I was going to serve with this while waiting for the chicken to do its initial cook, but there's still leftover broccoli rabe from yesterday and I'll probably throw some spinach into the mix for good measure.
