February 12: Boricua Soul + Burgers

 When I bit into my first bite of sweet potato cheesecake empanada, my life changed. I don't like cheesecake. I once vowed that if a man ever bought me cheesecake on a date I would leave. I also think it's not right when people sweeten sweet potatoes. I like mine savory. Why I liked this empanada will forever be a mystery, but I'm okay with that. In this month's Food and Wine, they featured a restaurant in Durham: Boricua Soul. I told my mom we had to go. On a sunny and unseasonable warm Saturday we found ourselves sitting on the patio, talking to the owner and eating some of the best fusion Caribbean-Soul food I have ever eaten. I ordered an empanada with collard (vegan ones) and I died. We're going back to this restaurant. It would be crazy not too. This is just the kind of restaurant I wish Greensboro had. 

The warm weather inspired us to keep eating outside so beef and veggie burgers with homemade fries and a salad were on the menu. It was a perfect end to a perfecty kind of day.
