February 1: Chicken Punjabi Biryani

 I know it's Chinese New Year and I should have made dumplings, but I'm back at work and I haven't been to the grocery store in a while and this is what I had the ingredients for. The recipe comes from Ruby Bhogal. I saw it on her IG and it was the first recipe of hers I have ever made and I would definitely recommend. For me, the selling point was the frozen mix veg as I've had a bag sitting in the freezer dangerously long. It was so exciting to be able to use it and use it for something that was actually delicious. I just ate some of the leftovers for lunch and I still love it. I also like how she offers a vegetarian option and she tells you when to split the recipe for when you're making it for a mixed audience of meat and veg - atarians.
