Feb. 25: Fish & Tofu Tacos

 It was a sunny day and there was warmth and I had this idea for a margarita to use the wee bit of tequila left in a giant bottle. But that turned into making Chonies (Lager, a little tequila, lemon & lime juice, symple syrup with a zesty-salty rim) which turned into Fish and Tofu Tacos. I make them based partly on a local restaurant and partly on these amazing fish tacos I once ate on Sanibel Island in Florida. I have no idea where that was, but I remember the way they were presented and the fact that my mom, daughter and.I sat at this diner like bar (complete with rotating cakes in a glass case) and filled our bellies with goodness before heading to the beach.
