January 9th: Chicken Curry Pie

 I don't think we have enough meat pies in America. There's chicken pot pie, but you don't hear of many other types of savory pies being eaten on the regular. A few years ago while traveling around Scotland with Watts he discovered the steak pie. He may have eaten one every day of our two week stay. Or maybe two a day for one week. It's been a while. Growing up my mom would make a spinach pasta pie, an easy descendent of the timbale- an Italian pie. Watching Great British Bakeoff really opened my eyes to the world of savory pies. I remember being absolutely delighted with the challenge where they made a picnic pie. I was inspired. 

Last night I made a Chicken Curry Pie from Lazy Baking. My pastry was an absolute mess, but it tasted so delicious. After making this, I decided that one of my New Year goals is to work on my pastry. It's just something I need to do. 

On a side note, Lazy Baking is the kind of cookbook that feels like a warm hug. I want to make everything in it.
