January 3rd: Black Bean, Yellow Pepper and Cumin Chili

We had our first snow today. It was 70 something degrees the day before, but then the winds came bringing with it cold air that turned the rain to snow. It didn't stick much and once the sun came out in the afternoon it pretty much all melted away, but Nuala and I walked about 10 miles in it. We savored every single flake just in case we don't get any more this year. 

Since it was cold and snowy, the day demanded chili. I made this black bean, yellow pepper and cumin chili that I once won a neighborhood chili cook-off with in the vegetarian category. It's totally vegan and delicious. It also comes together pretty quickly and if you have an immersion blender it takes minimal effort. We also threw some sautéed spinach on top of it and rice underneath it.
