January 24th: Tuscan, Kale, Squash Minestra

 I bought a butternut squash on Sunday and needed to do something with it. I opted for this which made more soup than I thought which means it will be a repeater or a freezer. It's a simple soup that's delicious. I kind of love soups like this because they're so satisfying and healthy. I could eat them all the time.
