January 16th: Vegan Tantanmen with Pan Fried Tofu

 It snowed and then it iced and then it snowed again. I started to make this Vegan Tantanmen with Pan Fried Tofu when we came home for lunch from the sledding hill where we spent the entire day. We didn't use corn, but we had some broccoli which worked just fine. It was kind of the perfect soup to end a day spent entirely outside with ice and snow pelting our faces.
