January 10th: Shrimp Scampi and Smashed Potatoes + Sea Salt Chocolate Chip Cookies

Last night was a good dinner. We had shrimp scampi and garlic bread, but not enough garlic bread. Watts put the sauce in a jar and I've been asked to get some more bread for tonight's dinner so that the dipping can continue. I also made smashed potatoes and sweet potatoes. Roast those olive oil and salt covered potatoes in an oven at 425 for an hour or so. I cut them in thirds because they were big. Smash them with a mug. Smother them with greens, bacon if you like and cheese. Melt that cheese until done. On the side there was some broccoli because I always think we need more greens.

For dessert I made something from Lazy Baking: Elliott's Sea Salt Chocolate Cookies. They were divine. The perfect sized batch for home eating and the perfect mix between two different recipes I usually make.
