What We're Eating 12/13-12/19
This is the time of the year when I start forgetting about dinner. It's not that I actually forget, but rather I'm too distracted by baking and too full from all the tasting and testing that dinner isn't always first and foremost on my mind.
Still, I should feel the people I love. So this is my best attempt at the best laid schemes for the week. I really think I'm going to make Mac and Cheese on Monday. I have been thinking about it for ages. There are also some leftovers that need to be eaten so I'll probably clear those out as well.
For Tuesday's dinner there are Brats down in the freezer and maybe I'll make some patatas bravas.
Wednesday's dinner will either be minestrone or this pasta fagioli. Then on Thursday I'll make a chili because it's been a while. Friday will have to be pizza because it's the kids last day of school before Christmas and that seems celebratory. Maybe I'll even make the crispy cheesy pan pizza and salad pizza. Sometime this weekend, maybe Saturday, I think this lentil orzo eggplant stew sounds good especially since we have most of the ingredients on hand. And on Sunday I really do want to do a charcuterie board.
We'll see how all of this goes.
And indeed none of this week is going quite as I thought. Gang aft agley and all that. We did eat Mac and Cheese on Monday, but then on Tuesday we ordered pizza. On Wednesday we had lentil orzo eggplant stew and for Thursday it was Tacos. Then for Friday it was creamy pasta with spinach and chickpeas because it wound up being busier than I thought with at least one Covid test thrown in the mix. On Saturday we spent the day with cousins where lunch was a charcuterie and then came home and whipped up a quick red lentil dish for dinner. Today is Sunday and we have two baking classes and who knows what we'll be eating, but because Watts asked there will be meat. First we made figgy pudding at 12:30. When that class was over, we ran out to Bestway for meat and cauliflower. Then we had our Brandy Snap class. After that we were starving and so I quickly cleaned up while making roast cauliflower, patatas bravas, sausage, cheesy spicy black bean dip and various other noshies. We ate until we were full and then stuffed our faces with brandy snaps. A good day and better night.
