Banana Pudding

Banana Pudding seems excessive to me. I mean have you ever eaten a banana? It's good until the last quarter. Those last two bites. I either have to accidentally drop it in front of Mango or toss it in the trash. It's just too much. I remember the first time I ever heard of Banana Pudding. It was in the first few years of living in North Carolina. My mother's cousin who had moved down here when she was a teenager offered to bring it to dinner for dessert. It was fine, but it didn't knock my socks off. 

Flash forward to a few months ago when I found out my niece had asked my mom to make her one. Flash forward less than a few months ago when my mom made another banana pudding and my daughter discovered she liked it too. To be honest there's nothing offensive about a banana pudding. It's very trifle like in its existence and therefore, by default, extremely comforting. 

And so, on Wednesday, after finding myself with an abundance of whipped cream and Nilla wafers after a class demonstration I grabbed some bananas and a packet of instant pudding. I daydreamed about making my own creme pat, but alas there were not enough hours in the day. The result.... Pretty damn delicious.
