What We're Eating 5/10-5/16

Really all I can think about eating is the next batch of Mille Feuille on Wednesday. The Bake with a Legend class with Dan Beasley Harling, a former Great British Bake-Off contestant, was more than worth it. The rough puff recipe he gave to us is worth its weight in gold. I've been struggling with the poor quality of our puff pastry but totally intimidated by making my own...at least not yet. This is a nice compromise and way to work on that confidence. 

Monday: It's just me and Watts. At least I think it will be. That could change. There is shrimp in the freezer and so I'll probably whip something up with that. In fact, maybe I'll make Shrimp and Grits because I don't know the last time I made that. 

Tuesday: It's my first day off. There was a steak. Sauteed beets and spinach with feta. Braised Fennel and Homemade Ciabatta

Wednesday: Well, Mille Feuille. Obviously. But I suppose we must eat something before it especially since it's a back deck dinner with my nephew, mom and aunt. I'm thinking one of my chicken thigh recipes that I also make with tofu. Everyone loves a good chicken thigh. Update: The back deck dinner turned into a bust with one of the coldest days ever felt in May in North Carolina. I'm totally making that up, but it was damn cold. Which made this cucumber salad that I made seem a bit ridiculous even though it was delicious. 

ThursdaySheet-Pan Tostadas with Black Beans and Peppers. When all four of us are here sometimes it can be tricky to make sure we're all happy with dinner. Hopefully, this will work. 

Friday: Homemade pizza. Maybe I'll make the crispy cheesy pan pizza. Or maybe I will make something totally different. 

Saturday: We have another graduation which means dinner that night will be leftovers or noshies or cereal. 

Sunday: Maybe I'll make a baked potato soup since it's been bizarrely cold lately. Maybe I'll make a tortilla soup, if I don't make that on Friday. Whatever I make it will probably be the weirdest dinner for a Sunday in May.
