What We're Eating: 4/26-5/2

I miss posting my weekly menus. I realized that even when I went off track they helped. They helped me picture the way, figure out my groceries and I wasn't going to the store a million times. Only a half a million. I mean we do have a tiny European style fridge that I absolutely love and wouldn't trade for anything in the world. Somehow it became the end of the semester which is notoriously busy. I kind of go into survival mode on some days and ignorant bliss on other days. That being said I decided to find 10 minutes. TEN MINUTES. THAT'S ALL. To sit and plan what the hell we're going to be eating. I'm going to start mid-week here on this Wednesday, but I'll also think back and reflect on yesterday because that meal was good. And while I'm at it I'll even give Monday a shout out because it was a simple quick meal of necessity. 

Monday: I didn't sleep well the night before. I was locked in my cinder block office all day. I had to run to the library and drop off an abundance of glass recycling. That being said I barely got a work out in and I barely even thought about dinner. So it was pasta with jar sauce and ricotta mixed in. Plus baby bud broccoli. My favorite of all frozen broccolis. 

Tuesday: It was just me and the lad and we still had some pork chops from the farm in the freezer. I busted those out in the morning before heading to work. Then eventually I made these: Pork Chops in Lemon Caper Sauce. It was one of those sauces that I totally ate with a spoon while I was cleaning up the kitchen. There was a cucumber tomato salad and sweet potato roasted wedges on the side with siracha ketchup. We ate well. 

Wednesday: I am taking a big risk with dinner tonight. I making something that I want to without really thinking about the people who will be eating with me. It's Thai Curry Risotto with Squash and Green Beans. I also have sausages for the meat eaters, but really my thought is that it's curry. It's risotto who is going to really complain?

Thursday: Tacos. Veggie Tacos and maybe some steak tacos for the meat eaters. DIY. 

Friday: I hadn't planned the weekend. Sometime in the afternoon, my nephew dropped by to tell us that he had his first job offer. He's graduating next weekend so he was quite excited. I broke out the bottle of prosecco stashed away, plopped in an ice cube or two and made Indian Butter Chickpeas. Then we ate the rest of the mini-cakes I had made the night before. 


Saturday: In an act of semi-spontaneity, we invited friends over for dinner. I broke out Flora Shedden's first cookbook Gatherings and made an Asparagus Ricotta Tart, Fennel and Chili Olives, Spiced Popcorn with lime. Nuala made Tunisian Chickpea Stew. There were also lamb meatballs. And Flora's Chocolate Rye cake. 



Sunday: The friends who came to dinner last night brought us sausages from Giacomo's and so we cooked them up tonight with onion and peppers and because I couldn't think of what else to make I fried up some hashrbowns.
