What We're Eating 2/1-2/7
Today I actually started the day saying, "Happy February! Happy Monday!" to someone. And then I saw it was snowing everywhere I used to live and I contemplated having a tantrum like an honest to goodness toddler. I want snow. It's winter. Is that too much to ask? Apparently so if you live in North Carolina.
Monday: We're starting the week off with leftovers. So much chili from yesterday that needs to be eaten. If anyone objects, there are quesadillas I suppose.
Tuesday: There are sausages in the freezer and kale from our neighbor. And that leaves pasta or potatoes depending on the type of sausage they are. Whether I go more Italian or more British.
Wednesday: Today could be interchanged with tomorrow if Grandma and Cousin Ryan come round, but we'll know better when we're a bit closer. Potato Cheese Soup with pickled jalapeños. Finally, a use for the jalapeños sitting in my fridge.
Thursday: Creamy Vegan Tofu Noodles because that tofu needs to be used!
Friday: Pasta. That's all a Friday night can be. Or pizza. That's a bold statement that I don't necessarily mean, but for some reason I just like it simple on Friday nights. Every other night of the week I will cook up a storm, but Fridays I just want to curl up on the couch. It's how I rolled throughout my 20s, got out of that habit for a while, but since the pandemic it's what I like best.
Saturday: Dumplings. We've been talking about this for a while now and I just had two moments that made me realize we need to make these. But there's a slight possibility we won't make them tonight.
Sunday: Is it the Super Bowl? I think it is. We used to have parties for people who didn't want to watch the game, but wanted to eat the food. So we'll make wings and nachos probably. And we won't watch football and it will be 2, 3 or 4 of us and we'll be happy.
NOTES:
We made these dumplings and Mark Bittman's dumplings on Friday night. Saturday night we made Bittman's Gnocchi and Vodka Sauce. Both of his recipes came from his book How to Cook Everything Vegetarian. And it's now Sunday and the Superbowl and while we won't watch one second of the game, we are here for the food. There will be poutine, Indianish Nachos, Chicken Wings and Doritos, Cheetos and Fritos because we haven't had a road trip in a good long while and it's about time we ate some junk. Dessert will be flourless cocoa cookies and Flora's Iced Gingerbread loaf cake. We will be okay.
