What We're Eating 1/11-1/17

This week it's back to school for me and that means the first two days of the week I also have to drive to my office to work which is 30 minutes away. And it's not so much the commute that makes me have to think more about what we'll be eating, but more the fact that when I have downtime at home---a few minutes in between classes or the minutes it takes to downloaded a recorded lecture, I can wander into the kitchen and start making dinner. Chop up some vegetables. Take out some frozen meat to start defrosting.

Monday: Shakshuka. I will make some modified version of shakshuka because I keep seeing recipes for it and we have a lot of eggs. .

Tuesday: Leftovers. I love the satisfaction of cleaning out the fridge. Others might not view it in the same way, but there is something joyful about not wasting food.

Wednesday: Broccoli and Cheddar Soup. Ever since we decided to make this I can't stop thinking about this.

Thursday: Curried Potatoes and Lentils....I wrote this down and I'm not sure where this recipe is or if it's just a craving I had. We'll figure it out.

Friday: It's my nephew's birthday weekend, but I think we're going to their house for an early afternoon outside dinner. I have no idea what we'll be eating, but I won't be cooking.

Saturday: Nuala found a recipe for homemade ravioli in a cookbook she got for Christmas. I said we could go for it. We'll probably also go for the focaccia in Aran's cookbook.

Sunday: Dumplings. If we get dumpling wrappers.

Baking: Besides focaccia, we'll be whipping up a pear, coffee and hazelnut cake and maybe we'll even try Brioche for another try....
