What We're Eating 12/21- 12/27

To be perfectly honest, if we eat anything at all besides raw cookie dough in the days before a holiday then we're doing okay. 

Monday: Homemade Mac and Cheese. I live in the south where Mac and cheese is often considered a vegetable or a side. Also, everyone has an elaborate recipe for it. I found this recipe in a panic one day when my daughter asked me to make it. I think it does the trick. Not too fancy and super easy to make. 

Tuesday: Skillet Sweet Potatoes and stuff. I had a bunch of sweet potatoes and so that means sauce some onions and garlic, a can of tomatoes, two cans of black beans, spinach, some vegetable broth, salt, pepper, cumin. If I have corn, I throw that in as well. Tonight I found a red pepper that needed to be cooked and so I threw that in. 

Wednesday: It will probably be pizza. Maybe it will be Chinese. Whatever it is, I'm not cooking it. 

Thursday/Christmas Eve: I wrote about our Christmas Menu before. Tonight we're having Shepherds Pie and Indianish Nachos. Also: Sticky Toffee Pudding. 

Friday/Christmas Day: It's a festival of lasagna. Also a Yule log/buche de noel. Plus all the cookies. 

Speaking of Cookies: By this point in the week, we're going to have made: Toffee Bars, White Chocolate Sugar Cookies, Gingerbread People, Fudge, Oatmeal Chocolate Chip Cookies, Linzer Tarts, Shortbread and Rice Krispy Treats. We've also made: Spiced Nuts and chocolate dipped apricots

Saturday: It's Boxing Day and I think we'll take sandwiches and cookies and go hiking. When we return home, it will be leftovers in true Boxing Day style. 

Sunday: A strategic day of figuring out what we feel like eating after all the non-stop eating we've just engaged in. More than likely it will be a noshie kind of day. But isn't it always?

Actually....Sunday wasn't a noshie day. It turned into a ratatouille and steak with red wine sauce kind of day.
