What We're Eating 12/14-12/20

For the first two days of this week, I'll be home alone. This means I'll revert back to ways of eating that I survived on as a 20 something year old. Baked potato. Quick skillet beans and veggies over rice. Whatever leftovers are in the fridge. Maybe a sleeve of digestives. It's the holiday season, don't judge. I'll also probably use those two days to pre-make the Christmas Eve and Christmas Day meals of shepherds pie and lasagna. I can make trays and put them in the freezer to make it a little bit easier for the actual holiday---especially since Christmas Eve is my birthday and especially since we'll be outside in a pandemic appropriate celebration with my sister's family. 

Monday: I have no idea. 

Tuesday: I have no idea. 

Wednesday: Five Bean Soup. My sister made these adorable holiday care packages for her friends and me! It had lysol wipes, Christmas face masks, spiced nuts and five bean soup. It was so adorable. 

Thursday: Pasta with the good sauce. It's actually called Creamy Tomato Rigatoni, but my daughter has taken to asking, "Can we make the pasta with the good sauce?"

Friday: Chickpea Stew. This is a favorite and I haven't made it in ages. I think it's about time we threw it back in the rotation. 

Saturday: Italian Wedding Soup with Turkey Meatballs. I might make this earlier in the week because I have all of these ingredients. Maybe it seems we're a bit heavy on the soups and stews this week, but it's December and it's easy and it makes us happy. Also, the turkey meatballs can be subbed for veg ones. But we can also have turkey meatballs on the side so the meat eaters can be happy. 

Sunday: Festival of Noshies. Last Sunday was supposed to be a noshie day, but it wound up being just me. So, instead, with a full house and hopefully an outdoor fire we will nosh away.
