What We're Eating 11/30-12/6

 I confess I get excited about cooking in December. I love cooking when it's dark outside already. How the windows steam up. Everything gets cozy to the max. 

Monday: Butternut Squash and Cheddar Bread Pudding I've been thinking about this a lot since I busted open a butternut squash last week. I used to make this for Thanksgiving, but then abruptly I stopped. It seems time to resurrect it. 

Tuesday: Risotto with greens and mushrooms. We still have an abundance of greens from our neighbor and I was going to make risotto last week so it only makes sense. 

Wednesday: It's Garlicky Chicken Thighs with lime and scallion or Garlicky Tofu with lime and scallions! The last time I made this Watts said, p"lease make this again soon" and Nuala- who was at her dad's when I made it- asked if we could make it with tofu sometime in the near future. Tonight's the night!

Thursday: Falafel Pitas. When Watts came back from Israel last year, I made homemade falafel and everyone loved it and then I promptly never made it again. 

Friday: Red lentil soup. A classic standby.

Saturday: Pasta with meatballs. This is easy and cozy and will make us happy. I'm hoping we'll have a Christmas tree that day too.

Sunday: Black Bean Chili. Nuala requested this for sometime this week. It's one of my favorite, if not my favorite, chilis to make. 

This might all change. I'm not at home and I'm not looking in my fridge, freezer or pantry and my daughter's been at her dad's this weekend and sometimes she comes back and has ideas so we'll see what happens. Whatever it is, we'll eat well.

Notes: We wound up making the black bean chili on Wednesday and then the chicken on Friday, the soup on Saturday and the pasta on Sunday. Mostly just based on the fact that I forgot to defrost the chicken on Wednesday morning for no apparent reason.
