What We're Eating: 11/16-11/22
Monday: Tonight I've got chicken thighs and I've got my baby llama fuzzy socks on and I want something warm and comforting, but quick too. So I'm going to make some fast version of Coq au Vin because it's one of my secret favorite recipes. In fact, when I turned 8 I asked my mom for that and Beef Bourginon for dinner.
Okay, so I lied. I never got around to seriously thinking about Coq au Vin because the day kept going, but I did make this old standby of Chicken Thighs with Scallion and Lime.
Tuesday: Spag Bol. If you've never seen Man Up, you should. One of my favorite parts of it is when the two main characters confess their love for spaghetti bolognese. Spag Bol. Only they don't really love it or do they. All I know is that I love a good Spag Bol. And that's what I start to crave on nights when there's no light. I usually do some variation of a Giada recipe.
Wednesday: Vegetarian Tortilla Soup and Indian Nachos. If you have never tried these Indian Nachos, please please do. I'm making them on a night my nephew is coming for dinner because otherwise I would eat the whole pan. I am not even lying about that.
Thursday: Some variation of this recipe for Mushroom Stroganoff. I used to make this and my daughter didn't like it. She requested it for sometime this week. What's weird is that Watts also requested Beef Stroganoff recently and so this will do. Also, the last stroganoff we had was bought and it was gross and I need to erase that memory from my mind.
Friday: Gnocchi with white beans and spinach. I used to never know that I could just sauté gnocchi. Once I learned that I started making all sorts of easy dishes with it. This one happens to be a family favorite. Or one that my family teases me about endlessly because I love to throw white beans in dishes. Need protein? Here you go....
Saturday: I'm putting pizza here because we have things to do. Also, we have a working theory that Watts has grown allergic to a certain kind of pizza. So it might be a grand experiment. We'll see.
Sunday: THANKSGIVING. We're doing an outdoor socially distanced Thanksgiving with my family. So we will be eating all the foods that day. ALL OF IT. I'm bringing a Chocolate Pecan Pie, a Celebration Roast (for the vegetarians), canned and homemade cranberry sauce. Probably also a cocktail.
Notes for the Week!
We made it until Friday before I started changing things up! On Friday, we wound up having Gnocchi with vodka sauce which warmed our hearts. On Saturday, we had quesadillas and guac and sweet potatoes and black beans. It was a kind of "let's see what we have here and do what we can because I don't really want to order pizza" kind of night.
